Ok, so I know that jumping into a planet or a star will kill you, but can anything else?

What if you jump into an asteroid field or a station?

Also, I seem to remember hearing from somewhere that you can only set jump coordinates on the plane. Is this true?

Nothing will happen then. The only things that kill you are dev-wise called "kill zones", those are the atmospheres of planets and suns and areas with high radiation (they are essentially the same). The only other thing that can kill you are the system walls. So don't blind-jump when you are already 200K away from the system's sun, otherwise you might end up in the next system's system wall, which will instantly kill you.
