There should be always some trade event open, with clear instructions on forum, so new players would use it more.
Here is the way another mod solves this:
You craft a new commodity Mead (cask) out of Honey, Spices and Water which you can then sell at a certain station for an exorbitant price.
In that mod it is done in your ship's cargo which might imply that new logic has to be added to the Discovery mod. But i think it could be done with existing Discovery game mechanics in a slightly different way using the mechanisms of POBs. Since they can craft items like cloaking devices consuming a certain amount of assorted commodities, it surely would be doable to craft new commodities there out of certain other commodities that have to be delivered to that POB. The crafted commodities then could be sold for interesting prices at certain sell points similar to the dedicated ore sell points.
