What I don't get is why you don't just have a single one that produces <img style="max-height: 250px; max-width: 700px;" src="$1">

Because height higher than 250px is allowed anywhere other than signatures.

So why don't you have one setting both max-height and max-width, for signature, and the other just doing max-width?
