So I haven't been to every system in the game, but I'm just curious, are there any systems that are just dark black with stars like real space looks? All the systems that I've been to seem to have lots of nebulae and very multicolored backgrounds.

The short answer is no.
Sirius is actually a relatively dense cluster of nebulae, so there aren't many systems that particularly feel like "deep space". You could get custom starspheres if you want a change, though.

I'd like to see dark space too but haven't found any starsphere mods which would make the space look dark.

Of all the systems, Omega-3 looks most like real space to me. Actually, Omicron Zeta looks even more spaceish. O-3 has some orange nebulae in the background, while Zeta, as I remember, doesn't.

Omicron Zeta, Minor, Mu, Iota, Lost, 92 and 100 are closest to dark space as it can get I guess.

O-Lost. Quite dark there if you move towards the nebula-less part of the system.
