Could an AI attack another ship in self-defense of another non-AI ship if said inRP, the AI was serving and protecting his master? I mean we have robots in this timeline and I can't see why robots in this timeline couldn't protect their master according to the Three Laws of Robotics including the zeroth law.

Yeah sadly, the current AI's aren't realy Human Pets, lol. If he'd had RPed an AI with Freelancer ID this would've been a different story. But the AI's on Gammu and Primus are meant to be independant hence their tech already shows it's not Human made. So using this tech means you're one of the Kappa AI's thus not serving a Human or any Master of some sort, you can only defend another "AI", that's the restriction.
But if that AI engaged in a system without containing a Jumpgate, he can pretty much engage anybody as he pleases.
