probably bcs time is money and its boring too if u have to wait lets say 5min-10min till the transport arrives then u can start mining this way
and if the transporter is then there it has only to beam the mined ore and pay and can fly to his next destination
have seen that so far realy often and have done that my self too and i have never seen it stolen from someone else so far
even if there got another transporter i got only often asked if i could fill him as well ect.
i coulnd shoot him with my miner but i think i would probably then set a Bounty on his head ;oP

It just wouldn't make sense to deny players from defending their ore from theft.
