so - the materials used for such a connection might be more expensive, stronger than other material - reason for not building a ship out of such material alone might be cost efficiency. - well i can pull any reason out of a hat for that.

the connection is meant to be rather thin - to illustrate that the bridge module can rather "easily" blast it away - in case of danger.
it is a transport, the crew wants to flee from lawfuls. - leaving the cargo behind is a tactic ( as explained in the OP )
its just like that - if you face death by the police or military - your chances of escape are greater in a vessel the size and agility of a freighter - than in a train.
