Try Wraith, Bastet, Black Dragon, Blossom, Chimaera, Manta... I guess.

Eagle, while is agile, is quite big.

Just try to get yourself Flstat (not the server tool) and it'll tell you in radians/second the horizontal turning speed of each ship.

I think the Eagle or the Katana are the quickest off the top of my head.

I'm guessing the Black Dragon or the Chimaera. (Which are hard as hell to hit in a Templar).
