The elephant doesn't have any specific lore background, it's just a powerful (but also intelligent) animal that's very hard to stop once it starts charging.
Elephants are occasionally seen in Latin and Mediterranean heraldry, and there is of course the association with Carthage, one of the inspirations for the Corsairs, and the general theme of a "southern" animal. A lot of heraldic animals like eagles seem really overused, so we went with something a little more unique.
We've brightened up the text a bit; this was written at night-time and seemed fine but it's true, during the day it was a little too dark to read comfortably.
Just seen your comm. Your Latin is still wrong. It's potentia meridiana for "southern strength" or potentia meridiani for "strength of the south". Potentia meridianam is untranslatable in English because English doesn't have the accusative case. It is also not grammatically correct.
