And had probably 3 interactions on the way
5 if you include nb. Virtually nobody pirates those transit systems so you avoid RP naturally

Limitations can keep it reasonable. A few transports per jumpship isn't crazy. A group of 5-6 transports would require 2 jumpships. To me, it was a thing you'd do in a space world that was enticing to people, got them to come and play here. Removing transports from being able to be jumped undoubtedly killed a great aspect to the mod. You really think it saved the server to have ruined jumping transports? It just ruined jumping on many people, who invested a lot in them for that purpose, which took a lot of regular trading. The solution was to sort it out, not axe it for those who only ever see worst case scenarios.
With the suggested changes, there would still be plenty of opportunity for interactions regardless of using jd's to jump small groups. Jump trading was a 2nd tier to trading/supplying, and made a lot of sense that it be something to be earned.

Sure but like how much can you haul? 1200 units of cargo at most? with a cost of 4.5 mil per jump? Is it cheaper if you use a JD3? Jump trading with a bustard for small amounts is possible but not very practical.
I envison using Bustards to offer jumps to small groups of ships seeking ore. You could jump them to the ore field to meet a miner, or bring one. They still sit there to fill up. Once done, they jump out. How long does it take to fill 3 transports, then charge a few mins for a jump? Mining is mining, and it only takes a CD to interrupt a jump. Seems like plenty of time to go pirate a group while mining.
And on the other end, the group arrives at the destination, and is there for several minutes. But in theory, if notices go out of the jumps and their locations, eventually ships may be in or near that system waiting. They say it avoids certain territory, but you can't avoid your origin and destination. For the cost you should be able to earn that small jump convoy ability. There are plenty of reasons to bring people all over the server for various commodities, giving plenty of chances for interaction.

Maybe make special liners, capable to mount and use JD? Perhaps make them fragile, slow, huge, defenseless. This is what I'd like to have in the case of jumptrading and jumpsupplying.
