But it surely adds interesting edge. However it's easy not to loose track in there if you put mission markers on the map. It may not display objects but it will display markers and they will work. But I agree, if you can lock on some static immovable object it should be shown on the map and the ship maintains it's location all the time. Upon entering unknown system sensors would just assign pivot to your entry point and everything else you see and detect in system will be aligned and distance measured according to configured pivot. Unless of course there are strong gravitational currents and some nebula or something like that reducing your scanner range significantly, but then again how the ship would survive that in the first place. :-) Which reminds me of a special mission in Freespace 2 where you had to find a ship inside the nebula by following nav points, you could not see them visually but your sensors could barely detect them as blinking dots with uncertain location, sort of "cold/hot" game to find them. It was problematic because of the constant discharges were screwing your ship sensors and you had to relocate nav point if you have changed the course. Also there were Shivan ships (enemy) creeping around. Actually FS2 had a lot of awesome missions but that's offtopic, I just made example how even such hostile environment can be used in gameplay to create interesting and intensive mission. The only thing I don't like about the donut is that you get stuck if you try to pass through the airlocks. :-) Someone shoulda replace them with jumpholes to "interior system".
