Wow. That was the same idea I had, except with a dreadnought's bay doors. (Impractical, but realistic as it could get.)
I'm not up to par with lawfuls "demanding" anything, but it would be more realistic if the officer confiscated/destroyed the botts, batts, missiles, mines, etc. of the one who surrendered. Maybe make up a speech for reading someone their rights. I would hope that both parties would agree that surrendering loses the pvp battle, but some might just use it as a way to make someone stop shooting since it is not explicitly stated in the rules. LPI and LN may be able to ammend the Liberty Laws to cover surrender, since I would imagine 99% would happen in Liberty Space. Other than for pure RP, the only reason I can think of to surrender would be to stop the pwnage that may result in loss of weapons when your ship goes boom.
