Don't equate the cargo hold with the crew capacity. As for a number of crewmen: a few hundred at the bare minimum, possibly up to one thousand or more (I'm not that familiar with the Sarissa). Remember, every room on board is not at full capacity at all times.
While some people may like to RP having crew by placing Spaceship Crew in the hold (or similar things) I don't think it's necessary.
When you trade human cargo, it doesn't go into the command bridge of the transport. So I really don't see why players put space ship crew into the ship CARGO holds.
I'd say about 1500 as the Sarissa engine's must take alot of room inside the hull. Including gunners and such personel.
Osiris Could, in my opinion get by with 1200 crew because it is small and order is small so it cant afford to put big crews on ships, but every other BS i would say 1500-2000, the BS is floating fortress, i would presume it needs at least 150 engineers to keep it operational, in 3 shifts so it would be 450, you need at lest 500 soldiers because such a big ship can not be allowed to fall into enemy hands by boarding, it is just too valuable, then i assume that kind of ship can hold about 70 fighters, and including the pilots for the ship itself, and boarding shuttles i would say 100 pilots total, medical staff for such a big ship wold also have to be gross, because in battle every second can be crucial and people can die if they are not treated at once, so i would say 50 staff on regular, 3 shifts=150 and in battle they would be all summoned. There should be at lest that many cooks too so 150 cooks+150 medi.staff+100 pilots+450ingineers+500 soldiers=1250, the rest would be somewhat regularly distributed between command, scientists and gunners. In war situation the number of soldiers can be increased as they would perform boarding, and the boarding of their mothership would be more likely so there could be up to 1000 soldiers, hence the 2000 number.

The cargo space of our ships don't represent their crew complements nor do they scale with the size of the ship. They only vary in size for balance issues. As for a battleship crew, I'd expect no less than 1000.
From the screenshot, it appears planetscapes are well scaled with ship sizes (albeit the ship goes through buildings). But the solar objects aren't (planets, suns, ships).
Pending on how much systems are automated. You could compare it with like Star wars, where several thousand people were needed to man a destroyer or even smaller cruiser. So go figure if this ship needs gunners, crewman, engineers, officers and blabla not.
Cap.Kennedy's number seems to be reasonable, although I doubt that a battleship usually has to carry a lot of fighters. You need additional space AND men for the maintenance of these vessels, too, and that space might be filled with more power generators or whatever to help the battleship in battle.
Luckily, there are different modifications on ships possible inRP, so you can RP what you want (in Sci-Fi you can also have fully automated ships!). Just don't forget to take a look at real world ship crews and what they are made of, so that you don't forget to include maintenance crews (which may include environmental controllers, waste disposal teams ...), kitchen staff, engineers, medics etc.
The Sarissa is likely to be the ship that needs the least crew members to operate of all battleships, probably even less than certain heavy cruisers. Outcast capital ships are designed to work with far less crew then their counterparts simply due to the limited amount of personnel.
What for would they need thousands of people aboard one anyway? If it gets damaged, it will need to get back to the shipyard. Boarding crews? Outcasts consider their tech superior, so no need to board anyone else. Hostile stations tend to get blown up too (see Messina).
Also, it's one of the most oversized ship in the entire mod. Statwise it's a Dunkirk, yet it's twice as large. I still hope it will get fixed so there'll finally be some use for them in .86
