I prefer gunboats and fighters. I'm not big into bombers or really BIG ships. I don't have the skills to effectively pilot a bomber and really big Capships seem... too cumbersome? Again, I lack the skill.
The bigger the better...especially if the other guy is as willing to hold fire to chuck some chat out as I am (although, those big ships cost sooo much...I get bored of constant trading...)
I like most ship classes... except for the Flying Fish, The Albatross, and the Correllian Corvette Battlecruisers.
They have Cruiser Firepower and Battleship Agility and Size.
At any rate, if I'm in a Bomber, Gunboat, or Fighter, I joust. I'm decent at it, a few kills here and there. I'm normally just a distraction to the enemy.
Cruisers, I use a bit of a hit-and-thrust method. Fly in on Engine kill, fire every single gun and change direction, fly out, turn around, and go to full thrust. But that's against caps. If I was to be fighting a smaller ships, I'd thrust, fire missiles and guns in turret mode, change direction, lather, rinse, and repeat.
Bombers, I use a similar method on caps. Still need practice... I've played transports too much.:P

I enjoy my Praetorian, and my Preagle. Laugh all you want, but being a bomber is nice and easy, most times. Take it one SN at a time.
