Templar Knights, their reason of being as history recounts it, was to offer protection to pilgrims on their way to Jerusalem and other sacred sites, mind you, no matter their religion, and to protect those particular sites - temples, hence Templar (Especially the site of the Old Temple in Jerusalem).
This story of the purging of infidels, that's maybe a secondary conjectural belief of people about them. Waging war was not their primary directive, their ideology. Fighting, for Templars, was in response to aggression, not initiated by themselves, at least ideological that is.
