what is the visual cue I'm looking for here? Is the damage splash from the gun supposed to highlight the fragment pattern?

At first you'll have to look VERY CLOSELY for fragments, if you look at it model-wise you'll see that the base model has irregular indentations in the spots where blown-off fragments were, fragment locations remain the same for each asteroid type. The more you mine, the more you'll get the feeling for where the fragments are at. I could say it's some sort of a learning process.

There are also times when I see the node location via subtarget, but shooting that area does not break off a fragment, and I just destroy the asteroid. Should I just avoid using that menu?

Most, if not all the times, that menu does nothing but tell you how many fragments there are (which is already hinted at by an asteroid's total HP pool) and their position according to that asteroid's rotation.

What's a good number to aim for?

Whilst I'm not a man of statistics, my best time to get myself full was around 7 minutes with Bristol ID.
