And there was an undead member of the Argent Dawn, a Light-oriented organisation, Leonid Barthalomew:

Or Sir Zeliek in Naxxramas. A deadie so holy, the Light just had to give him a cookie.
The undead also have holy priests, so why not paladins? To be a paladin is a state of mind, as much as what you wear or who you fight for.
That said, I wouldn't roll one. I'm not much for playing paladins anymore.
