Which stats of a ship are the most important- a evaluation to classify sheeps

My opinion is shape is most important, since it determines how much evasion is actually required. For example some ships have holes right next to the target center, and even if you shoot the crosshair directly the weapon fire can go through the hole and miss the target, with just a small amount of nudging, while another ship of the same size without the holes would need to move a lot more to dodge the same weapon fire. Ships that are extremely thin profile also have an advantage in that they can strafe just a little bit and evade weapon fire. Sabre, Tridente, Asco, Bret Destroyer, all have massive holes near the target center that let them evade incoming fire very easily, sometimes they do it unintentionally. Storta and Bottlenose are examples of ships that are flat and can evade fire easily too, also unintentionally.

Unfortunately, shape isn't one of your options. You also dont list weapon arcs, which also makes a huge difference.

Of the five you listed, I would probably say

Size (determines how much effort is required to evade)
Turn speed (assume this means overall agility)
Power Core
Turn accelerartion
Hull

Shape, strafe and response time...

Ship doesnt need to be very quick if it responds very quickly (old 4.85 NYX is a good example of shape and response time added together)
