At the moment I'd have to say Gull. Although I'm a fighter pvp whore, I wouldn't consider a fighter to be my favorite ship to fly. Fighters are too sensitive, too hectic.
The Gull meanwhile is perfect, it's easily fast enough that turning isn't a pain and you can ek around lazily, but it feels sturdy and it has ideal proportions.

Much the same applies to the Pelican, of course.
