Start with Pokemon Blue/Yellow/Red then move to Gold/Silver. Do not play any beyond that.

I'd play it Blue, then Silver.

Of if you can't stand the graphics, leaf green/fire red on the gba.

In terms of gameplay, they're all the same. Even the story is virtually the same.
I suggest a DS emulator with Heart Gold or Soul Silver. Those are nice entry level games.
Emerald is pretty good too.
Pearl and Diamond were alright, but I'd say you can skip those.
Black and White were meh IMO, I suggest going for Black/White 2 since they have a new storyline that might be interesting (I haven't played it) and all the 6th gens.

If you want something more than just the games, you can always try these:
http://pokemmo.eu/ (Pokemon MMO that uses THE ROM of FireRed/LeafGreen. You can play through the game but with other people at the same time)
http://pokemonshowdown.com/ (Online Battle Simulator. You make a team and fight other people. That's all there is too it, it's the most popular one).

I would suggest going Fire Red - Emerald - Heart Gold - Platinum - Black - Black 2 - Y (when it comes out)
