I put off buying it for a couple of years, fearing the addiction that everyone was talking about.
Bought it a few months ago, and after Alduin croaked I had the feeling that this hasn't been as addicting or fun as it should have been.
What am I doing wrong? Mods? Expansion packs? The last bit of fun I had died when I got that alchemy/restoration sploit to work after my return from the Neanderthal convention at Sovengard.

Well, you're missing the point of the game. It's not just the story, it's the experience. Stop fast traveling. Make a new game, don't glitch/cheat/etc or use mods that give you a boost. The only fast travel you should do is the horse carriage one where you pay. Try that, I get the game is designed for otherwise, but when you do this, you see a lot more of the game world the devs put so much time into making. Also, make it a point that when you find a cave or something that you go into it and clear it out. I -never- start the main story till I'm level 30. I don't even warn anyone about the bloody dragons LOL Also, make sure you play on a difficulty that is genuinely a challenge. Rogue is the easiest class to play as, so if that was your fancy mix it up a bit. I play a heavy armour sword/shield that's a master of a good bit of magics. I shout dragons to the ground and I bash their skull in with a mace. Tends to work fine. ;D Seriously though, experience the game in a way you aren't used to.
On another note: DLCs are pretty cool. If you can only get one, I suggest Dragonborn. It's actually full of good story and excellent mapping. Oh, and try being a vampire regardless if you have the dawnguard DLC or not. It makes the game fairly interesting.
If you get that far into the game and find that you're not having fun, it's possible that you lack a soul. Or, that it just isn't the right game for you. But more likely, the soul thing.
Yes, mods and expansions do add a lot of enjoyment, but it's like a cake. If you don't like cheesecake, it doesn't matter how you make it, or how much whip cream you squirt on top. It's still cheesecake.
How much of the game have you been through? Have you joined the thieves guild? The college of winterhold? The companions? The dark brotherhood?
Have you done any of the quests to collect the daedric artifacts?
Honestly, the enjoyment comes from
1) feeling like a big bleeping hero
2) exploring the myriad different ways to deal with encounters, and not just doing the same thing in every fight
3) those glorious derpy moments, like when you hit an enemy with an arrow and he goes flying off a cliff
4) paying attention to the story, reading all of the various notes and journals you find
I always cheat, but I don't think of it as cheating. For me, it's about freedom. I want to be able to carry a bunch of different weapons and have all of the spells available, so I can use whichever one feels 'right' at the time. I don't like 'progression' in these kinds of games, really. To me, 'progression' doesn't mean 'sweet, I worked hard and unlocked this powerful thing', it means 'the game is that much closer to being over, and you just now have this power'. Things like the alchemy-restoration glitch don't bother me, since if I ever get hit by anything, it means I messed up, and so I reload saves until I do it perfectly.
If you haven't been sucked in by the Skyrim experience by now, it probably isn't going to happen. The only really noteworthy thing about the DLCs, apart from the obvious new weapons, spells, story, areas, etc, is that the characters are generally more fleshed out and have more dialogue. Especially Serana, she makes all other followers look like mindless robots (because they are, which is my biggest dislike about Skyrim).
If you're bored with the gameplay and think it's too easy, though, you might consider one of many mods that make combat, in particular dragon combat, more challenging.
Well first thing what I always do (after setting meself a khajit or Dark Elf {cause of the stealthiness}) go to that cave with tht weak-ass vampire and get vampirism ... then I travel through the skyrim getting Daedra items and as a talent tree I always go for that stealth tree (dunno how it is called) and conjuration (OP weapons for FREEEEE!) so thats pretty much it ... arrow from stealth to a knee is super effective in the game (just after ambushing someone with Dagon's dagger) how much is it? 16x the damage?

I once made a Khajit spellsword with a knack for thievery. Hybrid armor, with mage robes and light armor boots and gloves. His main weapon was the Elven Sword stolen from Whiterun's Jarl Quarters, imbued with frost using his own skills. In his other hand, he wields mainly shock magic.
