Not really. This is how space mining is likely to be done - mining with low-emission laser and gathering what is left in space. This doesn't really differ with what we have in Disco, just depicted in a more simplified way.

Maybe it was indeed presentation on how powerful guns will be. I remember there was a game with shrinkable capital ships (not Space Engineers) in which hit actually torn away part of the ship.
On the second thought, I realized that mining could be done by the very same weaponry as offensive one. Why to mount mining lasers, when you could achieve the very same thing with your normal weaponry?
You know, Zappers are actually the mining turrets.

It would be possible, but remaking asteroid fields from stable objects into moving ones (you know, giving them the very same script as mineable chunks) alone would harm the server capability and graphic efficience.
