There isn't any mention of China specifically in the game, but if you look at the info for the Coalition squad "Golden Warriors" you can see that they are from the East Asian fleet, there is also mention of an Eastern Republic and one other nation I don't recognize.
And as per the Chinese writing on the Yamato, that was probably a mix up on Digital Anvils part, after all it was made by a bunch of westerner Americans and most westerners that don't speak the language can't tell one Asian dialect from the other. I know I can't.
There is also nothing to suggest that China joined the Alliance either, hell China might even be a non-factor in all of this that never got off the ground for all we know.

Aha, so that's where you find it. I didn't know that you could read info on the Coalition squadrons in the Alliance database. Apparently, the Eastern Republic is Russia, East Asia is China, and the Tigris Confederation (the one you didn't recognize) is the Middle East, with the leading nation probably being Iraq because the Tigris River is a river in Iraq.
As for the Chinese writing...I finally figured it out: Taiwan (AKA the Republic of China...or what's left of them after the Chinese Civil War). Judging by Taiwan's anti-communist stance, they probably joined the Alliance.
And judging by Yue Fei's Coalition character, we can see China indeed was part of the Coalition and managed to pursue the Alliance to Sirius.
