You need an OCR application.
Highend SoHo and business HP multifunction devices normally has the OmniPage OCR application included on the driver CD/DVD.
Otherwise programs such as ABBYY FineReader is recommended ( http://www.abbyy.com/ ).
There are also freeware alternatives to the commercial offerings - some polished, some lesser finished.
If you have Microsoft Office versions XP to 2007, you even get a functional OCR application included in the Office bundle (MODI).
I use Ghostscript and Ghostscript-view. They are free. I don't know if you can make a *.doc directly, but you can convert into a *.txt (*.rtf I think, too) and make a *.pdf and such.

Its not included in the downloadable zip files, only on the CD/DVD's. You can order a replacement CD/DVD for your given model, from HP's website. OmniPage is a commercial product from a different company and can be bought standalone. HP has just made a deal so their Highend SoHo and their business class multifunction devices has one single user license and the application included on the CD/DVD's. HP can't distribute the application over the net.
