Are you using mining turrets? If not, you need mining turrets.

Get a mining ship, if you want one with a good cargo hold, that would be the Hegemon.

There's a field to the right of the New London jumpgate. Is that the one you're in? Give us coordinates please.

EDIT: OH! Check your hold. It automatically drops the ore into your cargo, too.
