If you're looking to PvP in a Transport...don't. You'll get licked 99% of the time.
Pay the Pirate.
I have an Adv. Train. Lots of Cargo, moves like Molasses in January, but I can afford to pay off the occasional pirate with my cargo covering.
Yes, I've run from a pirate or two. Usually it's not worth it. If you're a good turret-shooter, you can probably take down a small fighter, or a less-than-skillful bomber pilot, but not for very long...and they don't like it when you see them again.
So big is probably the way to go, depending on where you fly. I've flown the FireFly, Whale, and Adv. Train...in order of maneuverability and size. I like my train. I like my $$$.
liners are RP ships. they are not meant to haul raw materials. - they are good though. fairly agile, but really big, too. - they are well armed.
personally i simply don t like the whale. first of all - its a starwars ship - and then it does look like a maggot. - designwise, it very much looks like 80s sci-fi. - but yes, its small and fairly agile.
heavy tankers are great, too - rather hard to fly, not much bigger than whales ( and much much harder to fly ) and only moderately armed.
trains are cooperation ships - their 5 turrets are pointless, cause they don t even scare a light fighter. mind you - their engines are very much in the front - so they are hard to CD with anything less than a train CD.
when it comes to handling, the borderworld transport aswell as the pirate train are very nice, but won t have a huge cargohold ( and are not really the choice of a cooperation trader )
another good transport is the firefly ( but like the whale its "borrowed" from TV / movie ) - its not really a beautiful ship imo - but has a good mixture of cargohold, agility and size - a smaller alternative to a whale.
Well at the moment i've got a borderworlds transport and it seems to be working out fine but I am looking for a Transport that has a bigger hold. (i.e. Bigger than 3600)
Anyway, is it against Server rules or OORP to fly a Liner for Trading purposes?

I can't speek for the container transport or the whale - but I have flown the borderworlds transport - the firefly, the luxury liner, and the adv train.
firefly is great because of its small size - it can fly anywhere with ease - it has 8 turrests but only 4 fire in at once in any given direction.
the borderworlds transport was good too - very easy to fly around.
both the liner and the adv train are hard to fly from place to place. The liner fires more turrets - but carries less.
The adv train fires 5 in any given direction - but is hard to fly - the turning radius is HUUUUGE. docking with trade lanes can be tough - it will get stuck - and the only thing more riduculous than trying to fly a train through an asteroid field is watching someone else try to fly a train thru an asteroid field!!!
Several folks have said 'pay the pirate' - ignore defenses - but your original question was about surviving the NPC Wild. I agree, they are the big problem. Nomads have bad guns, but the NPC's don't disrupt you - the Wild carry the same bad guns and they disrupt you. The best thing about the train is the baddies need the train disruptor to stop you. The important thing to look for in a transport is armor - not the guns. And you should buy the Mark VIII armor upgrade. Uber-armor will help you survive the Wild NPC's.
As for the liner - it has big armor - and silly to fly in an atseroid field... but when I fly the liner I feel obligated to carry at least a few passengers for RP purposes.

It's not so much about the number of turrets... but about the placement as well.
On container transport the turrets are so far apart that all of them never hit... usually just the 4 nearest. It's also a very huge and easy target... in LF I can fly circles around the Container transport while still shooting and hitting it. (because some part of it still remains on the screen)
On trains the 4 turrets in the front usually don't hit a fighter attacking from behind.. only the one on the back does. But the cargo pods take hits instead of the ship... which can make a big difference.
Tanker is the best defended transport against fighters... the 4 turrets in the back are always close to target and also close to each other.
Whale is by far the most agile from the big ones.
Some of the lower class tranports are quite small and agile... while packing a very good punch.
ex.
Kusari Big Dragon....or Mammoth (only 2200 Cargo.. but really agile.. takes even the worst asteroid fields on "go to")

Well, i witnessed a Container Transport killing a Gunboat.
If armed well, it's not a problem.
Ofc, good Gunboat pilots would never get killed by a Container transport, i'm talking about little worse ones.
So, it all depends on what you want.
