So basically I am back in the freelancing trade after so many years, I pick up a few contracts in "Erie"(?) they claim it to be a difficulty level "1" however I am coming up against level 8+ and I get wiped out

Use the /restart miner or /restart freelancer command to get yourself something a little more capable from the start.
After that, focus on missions that ask you to kill bases but not the defence fighters.
If you want to kill some fighters, try anti-Rogue missions from New York. Bloodhounds are nice, fat targets that fall apart quickly.
Alternately, apply for a player faction and they'll set you up with a high level fighter or transport as a set-up package. Bowex offers an Eagle fighter or a Percheron transport, for example.

Those might be the players. Best way to make money is through player to player interactivity (Which can sometimes become awful as a few players behave worse than NPCs) or through power trading.
In a nutshell, if you want to make good money, mine in tau-23 or other areas, pirate, or trade. Missions are also a good choice, but only cap missions but you need a good cap for that.
So if you want to go straight forward for money, listen to the advices the people above me said. Join a trading or mining faction. IC| , Bowex, RepEx, DSE, IMG, BMM and many others are some examples.
You may want to go for a faction that is : Friendly to new players, will RP in their operations so they will teach you RP, and are at least decently active

It all depends on you. All I want to say that it is very difficult to learn the ropes around here and try to learn how to play all alone by yourself so it is better to learn by playing alongside someone, friends or faction.
Basically, I encourage to play together with someone rather than playing alone. If you play alone you can be overwhelmed with lots of new and complex stuff as well as maybe unfriendliness? Depends who or what you run into. That being said if you start alone you may lose interest fast.
Still, that is just a personal opinion, if you feel you want to taste the game on your own, do so. Nobody will stop you. It's just that, as any other multiplayer game ( and especially since it's an RP server) it's meant to be played with someone alongside you
