I was thinking that it could be possible to make a SRP for a "new" ship that would just be a special ship given by the admin. Wondering though how much work that takes.

honestly i dont see why not. its not going to give you an advantage.
The problem isn't people changing the colors and such, it's the people who will use it to make the ships hude and edit other things with the model files. so it kind of falls under the umbrella rule of not modding files. At least from my understanding.
A ship that does not share its textures with any other model should be safe to colorize. Like this Sutinga (for testing only, click to enlarge):
But you can never be sure. What if some future model will use (some of) Sutinga's textures (with the approval of jinx, of course)? Although you will still have your fancy custom, the new model will look like colored guano at worst.
