We have mastered FTL speeds, learned to use antimatter, able to terraform planets efficiently and even hear in space (Joking with it, super-realistic Freelancer could be boring). I guess any civilisation with that kind of technology level would be able to create gravity & anti-gravity fields.

Mass exerts a gravitational field. If you don't have mass, you don't have gravity. You can simulate gravity or counteract gravity through a centrifuge or through other means but you can't "generate" gravity or anti-gravity, that's just garbage.
Why do people keep saying FTL exists in Freelancer? jump gates and jump holes are merely fissures which connect two points in space. Don't even try to convince me tradelanes bring you up to speed of light, if they did you could go from the California gate to Manhattan and back a few times within a minute. If you're going to say the same thing about cruise speeds then I'm just going to point and laugh at you.
It's obvious Freelancer ditched the whole gravitation by rotation, the only realistic method of artificial gravitation by modern physics. But, granted they have mastered the definition and manipulation of gravitons then it's entirely a different matter. Think of the things we can do with electrons already, then apply it to gravitons.
Before constructing jump gates, LNS-Einstein was visiting other houses in early times of colonization using FTL. Later Rheinland when colonized Stuttgart, they had a problem with long time of transporting resources to Berlin and back (either weeks or months, dont remember) so considering light comes between sytems in matter of few years, they had to have FTL. Not even mentioning sleeper ships.

That's what I meant.
I'm assuming that the same technology that counters the inertia forces (for example the pilot would be sqooshed no matter how solid the ship is if the ship bounces off something, or the entire crew of a cap ship would get sea sick if the ship is changing course) is the same technology that creates artificial gravity.
The effects of gravity (earth pulling you down) such as you feel it is exactly the force that you would feel if you were accelerated of 9,81 m/s^2 upwards.
Thats why a rotation resulting in a centrifugal acceleration is often used as "artificial gravity" in some scifi/science concepts.
Gravity and acceleration feels the same for us, and a technology used to create artificial gravity could also be used to negate the effects of accelerations that you would feel when your ship course or speed.
