The original hud is not something you can edit so easily, at least from what I know. But someone who is more skilled on that could give a much better answer.
What I do, is merely create cockpits that suit the different ships by using the shipmodel as a base (slightly modified to lower the polycount)
They are only cosmetic and non-functional.
If anyone knows how to make it functional, I'd be happy to hear it
Very nice interior. I like that you are using the vanila cockpits and building up from there. The only issue that might be present would be if these textures are taken from anothet mod. If thats the case then disco devs wont allow them unless you get permission from the original creator.
To remove such issues - when I worked on the capital cockpits - I used only vanila textures present in the game cmp files (which are hundreds). Also for the interior either build the details from scratch or use "assistance" from objects again present in FL data.
In this way the cockpits will be yours and unique. And then you can give them to Disco with 0 issues.

PS: I have one final advise to you. Getting things in the mod (even if it requires a simple copy>paste) will take time (for devs to check the files). Also its not priotity. My point is - take your time and work on improving the interiors to the max quality of detail. You would definitly improve then further and the final result would be satisfying. (foe example I had like 10 versions thanks to @Durandal continuing advices and pushes to improve them more with details snd etc - I ended up with the current and final ones). So dont be hasty.
