I shall post here possibly they best pasta dish for summer! (which it is now in my part of the world but still tastes good any time of the year)
I call it "Pasta in Summer Sauce"
Ingredients: 500g Large Spiral Pasta - This stuff keeps alot more sauce in it so is the best, but any pasta will do. 1 Large Ripe Avacado - This is a very important ingredient so don't go cheap and not get one. 4 Ripe tomatoes One Red Onion - A white one will do just fine but you will have to cook it first. 1-2 Cloves of Garlic - I actually haven't used this in the recipe... must have missed it... =P 8 Large Basil Leaves 2 Teaspoons Of Capers - Not really necesary but I like 'em. 6-8 Tablespoons Olive oil 4 Teaspoons Balsamic Vinegar 4 Teaspoons Lime Juice - I just use lemon juice as I can rarely get my hands on limes. 1 Teaspoon Sugar
1 Teaspoon Salt
1/2 Teaspoon Chilli Powder
1 Teaspoon Dried Oregano
Black Pepper to Taste
2-3 Tablespoons Parmesan Cheese
Method:
Cook the pasta in plenty of boiling, lightly salted water with about 1 tablespoon of oil or butter added. Drain when cooked.
While pasta is cooking cut the avocado and tomatoes into 1cm cubes and put in a bowl. Add the finely chopped onions (if they were white make sure they were sauteed first), garlic, roughly chopped basil and the capers.
Mix the remaining ingredients thoroughly in another bowl and toss through the vegetable mixture.
When ready to serve put the hot drained pasta in a big bowl and mix the sauce and vegetable mixture through it it.
Serve
You can stick anything else you want in it like sun dried tomatoes, toasted pine nuts or olives. Chopped parsely works well on top. If you wan't anchovies reduce the salt in the meal and add some, finely chopped.
Hope anyone who tries this likes it, don't be put off with the long ingredients list, it's really worth it once you have made it!
