And yea same with me when im sitting on a lane waiting for anything I can get jumped as well.
You can still get jumped with your method. I dont see a reason.

But seriously why does 7/10 + transport NPCs now carry like food or water or oxygen? Can there be a bit higher and more interesting rates???
And I KNOW this is possible since before there were NPCs with pilot guys in them all the time and you could shoot them down and collect some in your cargo hold. Now it got a lot harder to do so... why?

yeah already do some of that. But still its cool to get a variety of random things and then sell them off like a trucker all over Sirius haha.
Maybe the NPCs can be made to carry valuable stuff far away from the base instead of the normal FWO, in the lanes or something like that, instead of flying with the cargo, directly past the sellpoint. So basically, shoot the NPC, get the cargo and travel to the sellpoint yourself, which would be a better option than camping the NPC spawning places near the sell points.
Also, the FWO carrying NPCs should be made to spawn near the bases, making NPC piracy something apart from the undock->shoot->tractor->dock->sell cycle. This might make NPC pirating more adventurous. btw, NPC pirates need good unlawful sell points for dropping off the cargo. But, that's just what I thought about the current NPC piracy dilemma
Im actually doing an rp to gather and sell to others as a little market, transforming it into a larger scale thing and sharing the income. Its fun to get a randomized cargo that u pick up and take.
