A first-time user stands a 50/50 chance to be addicted I would say... the second time he takes Cardamine the chances are raised to 75/25 in favor of becoming addicted and the third time pretty much seals the deal.
Of course the subject would go through extreme withdrawal even if he doesn't become addicted after the first whiff, and not too many possess the willpower required to go through that kind of thing unless they're given help... but as I said before: It's a 50/50 chance, and the third party who is treating the first time user doesn't know if he is addicted or if he is suffering from regular withdrawal symptoms, which could result in the death of the subject.

the pseudo-science behind the cardi addiction is shaky, to say the least. replacing ANY part of the human genome with that of a grass would be catastrophic, and the cell would die immediately. plant dna has up to seven strands, but humans only have two. replacing part of human dna would mean that the RNA transcriptase would be able to process any proteins - it would get caught on this seven-stranded dna and not be able to make the proteins; without enzymes, the cell would die, and the cardi 'addiction' would cease.
however, i do see two potential sandboxes for this char of yours; attacking corsair human organs trafficking, or attacking outcasts. either sound fun.
