I know, on Dev's ToW mod, flying was extremely diferent from what we have here. A mere turn on the right would make your ship make something like 30 degree rotation. So basically, you could roll easily.

Sadly, it's not mine. Yet.
I've tried using my joystick in Freelancer, by mapping the thing with the program that came with it, and honestly... it sucks. Then again, it wouldn't even work right. For instance, I would move the joystick to to left, and I would turn left in a constant circle with no way to get out of it unless I used my keyboard. Same way turning right, up, down, diagonal, etc. And the throttle wouldn't work, but if I could get the damn thing to fly with a joystick I'd be happy using my keyboard for throttle. It also might be that it's just a cheapy Logitech Extreme 3D Pro ($30) so maybe someone with a decent joystick should try it out.
This is a roleplaying mod, howcome we don't have rolls...

The only difficulty is to find the right variables for it to make them available like Up/Down strafes. Basically it's already implemented in FL, we just need to enable it.
Actually, rolls only work on ships with a low profile or quite big wings... The Patriot/Liberator for example has no use for a roll key. But hey, rolls look cool and encourage people to fly Arwings.
