Obviously it depends on the pirate's roleplay and who they're pirating, but aside from that.
The absolute maximum a trader can make from one haul is 70 000 000 for a freighter shield, gunless 5ker hauling premium scrap to Alpha.
A more realistic trader hauling a regular ore makes, let's say, 4700*9600 = 45 120 000
A non-ore trader on a medium-long trip makes maybe 4700*2900 = 13 630 000
Back in the day, the good old "2milordai" was a reasonable approximation of a reasonable demand. Piracy was high enough that meeting more than one on a single trip wasn't unrealistic, and profit margins were noticeably lower.
With the money traders now make and the maybe 0.2 pirate encounters per trade run, 2 million is nothing for any trader.
Every pirate has to decide for themselves how much of that profit they feel is reasonable to take, but there's nothing wrong with the pirate wanting to actually make money.
I don't see why pirates need to turn into beggars, weighing their demand like "oh, I mustn't cut into the trader's profits too much, I'm just going to ask a very small amount so they'll actually pay".
(Most) pirates are selfish, and that's fine.
Of course like Jack said, if you're going to make a very high demand, offering a proportional amount of RP in return will keep the mood good between both players.
All that having been said, a huge amount of traders won't stop, won't talk except for unintelligible oorp gibberish, and won't pay regardless of how low the demand is ¯\_(ツ)_/¯

Cargo piracy is the best. And...seeing as you need a transport to do it properly, it puts you more on an equal footing with whatever transports you intend to rob.
Im mostely Trader, and I have jet to set up a pirate or terrorist, so I am biased. But :
I often enjoy getting pirated. If done well its more than worth my while, and I even give gladly.
But on the other hand :
Dont get to greedy. I might take the time to try and *flee* , only to spend even more money on a bounty.
Its happened before. Im not in here for money, but I will take no shit just because somebody believes Im a cashcow.
Sometimes there are Pirates I see as a sort of bucaneer, as swashbuckler anti- heroes. They even get a tip about police sometimes, or I enjoy buying a safe passage for half price by telling jokes. Fine ! And well worth my time.

Yo what? Transports kill other transports quicker than anything short of a cruiser. And you'll only be on equal footing if your own transport is small.

Or if you have a Battle Transport. Also consider from the person being pirated that it's easier to hit an attacking transport than a Bomber. So, I see that as more of an equal footing.
