1) Nope, the pilot model is actually an equipment that gets attached to the hardpoint. So unless you make the model big enough to hide the pilot, it won't work.
2) Yes it can, but the pilot equipment is made so it has a chair atached to it, which would look strange at least on the bike

What if we make the pilot a pillion rider? Would that work?
Can't the pilot + seat be "sunk" into the ship model as much as possible and the rest of it that sticks out be covered by the model-pilot?
Likely, it will all come down to scaling whether it looks appealing in the end because this racer would likely only be cool when it is not huuuuge.
