A friend of mine recently introduced me to "Dwarf Fortress", an interesting free game. In it you create a dwarven stronghold. It's very in-depth, and fairly complicated, but quite interesting. If you decide to try it out, then the wiki is your friend.

Somewhat complex, you'll find, and it takes a couple of tries to really get the hang of it, but it's fairly interesting, if somewhat sadistic at times. Watch out for elephants, for they are the bane of all dwarves, and for carp (seriously, they're hardcore fish), as they will eat your fisherman. Oh, and be careful with wells... dwarves seem to have an irresistible urge to throw themselves in.
Apparently they also like being possessed and then making things...

That is so amazing... if they go into a "strange mood", then they go and lock themselves in a workshop and demand materials. If they have what they need, they make something awesome and become a legendary craftsman. Alternatively, they may go insane and kill another dwarf, then drag his corpse back to their workshop to become a legendary bone or leather crafter.

Staff roles: Story Dev Economy Dev
Do you have to be linked up to the internet once you've downloaded this to play as a multi play game, or is it a stand alone SP game? Can i download it to a memory stick and use it on a PC with no connection in other words?
Oh, and this sounds like a very complicated version of the game Baldies:P
SP only. If you check out the wiki, they also have graphics replaces which really make it look a whole lot nicer. The game is actually only about 35 MB, although it's surprisingly intensive on the CPU for such a tiny file size.
