Or you don't have any clue about role-play, and you only see trading as a way that you, personally as the player, can make oodles of money to support characters that otherwise can't support themselves. Instead of figuring out that RP'ing while trading is and can be fun.
I agree with your first comment, Sterlin. Those people who find it a chore have, I fear, never actually TRIED to role-play it. Or only choose high profit/high risk routes in the first place, because they just want the most money for the least effort.
Heck, some of the best role-play and fun I've had on Disco has been running as the escort / scout for a trading group - and vice-versa, hiring someone to scout for me.
I had some awesome RP and fun back in my time with Ageirawr| (Ageira|) and IC|.
More troublesome than the pirates with lolcaps it's gonna be the caps in the house sistems this means, is now impossible to use lanes in the house sistems if you have a cargo full of something restricted. Since now they can almost kill on sight. "drop the cargo or die" "5 seconds to do it or die"
Being in NY sistem all the time, means you are a lolwutt...
To add my negligible, obviously easily ignored doubts and fears, I can't help but fear that this will cause a lot of grief, especially in the trading community. By extension, this spreads out to the entire community of new players as a whole. Trading is one of the major ways that new players make the money to buy their ships, and I fear that if these changes are permanently implemented, many new players will be scared off by cruisers and battleships hounding tradelanes in the neutral systems between the house systems. Gallileo is a good example of this. I see a lot of pirates there as it is, and very few law enforcement/bounty hunter individuals.
You also bring up the point that traders should hire escorts, but I contend with the issue that traders newly starting out simply do not have the money to hire an escort for a long run. This fear can even be extended to those new players still getting used to the mod, the way its run, and unknowing of the whole escort idea, who try to play, and find themselves driven away by pirate capships.

My only trader is BWT. How do I fight a nova-equipped bomber in it? Or, say, corsair lolboat?
Trade the BWT in for a Cap8 Shire. You may still lose, but he'll know he's been kissed. And it is possible to win against an NPC Ossie with a Shire - I've done that many times.
But that means you can't haul 5K of cargo and make the maximum money for the least effort ... sucks to be you, then. :P Enjoy going boom.
