I might go back to my original plan and build out assymetrically. Put in the tanks and one habitat at 3, and the second habitat and the solar panel/dish combo I mentioned earlier at 4. Might make the progression feel a little smoother.

This is true. I'm planning to save that for levels 6-10, though. I know the mod's currently only using 5, but there's 10 in the files, and any viable replacement's going to need them in case they decide to implement the higher levels.
You can always add extensions onto the extensions. They don't have to all come out from the core. I think that having more depth is more important than making a theme out of levels 6-10, especially since we're not going to see them any time soon.
Got another update added to the OP. I went back to the drawing board on core 4. What I had originally presented as core 4 is now core 3, and I made some new additions for the updated core 4. For core 5, I'm planning to add a couple more docking bays and expanding a bit vertically so everything's not quite so crowded as it is now.

The only asymmetric element is the solar panel and dish on the top. I'm not entirely certain I like the dish, but after all the work spent texturing it, I thought I'd at least put it out there. If it's not a popular addition, I can put another solar panel there.
I'd suggest, rather than changing the dish, actually changing the inclination and height of the solar array, such that the image isn't one droopy ear and one straight ear?
