The Manta is my favorite VHF, it doesn't really have any particularly shining qualities but more importantly it doesn't really have any particularly glaring weaknesses either.
I think I still have my most combat hours in a Manta.
It's also the only fighter I know of that has both a CD/T and a CD. It's the ultimate piracy machine.
Five class ten guns, CD/T, CD, M, CM and one class 5 turret.
One of mine has 5 Sammaels and a Belial, Mini, TCD, Screamers. The other has four Sammys, one Sidewinder, the rest the same.

No the stinger or...whatever else you would call it is the best i've used. You may not like the skins but who cares when you're making everyone jealous because they don't have a ship anymore and you're flying away with their loot.

Gladiator has CD/T and CD as well. Only four guns... but then again those guns can be Tizonas. It's pretty nice too.
I'd actually recommend a Manta or a Nephthys. The Nephthys has a serious powerplant and armor, and once you pick up even the most basic dodging should help let you get in a lot of shots before going down. The Manta, on the other hand, is mostly vertical and so may help you learn to dodge more effectively than the Nephthys, while still having a respectable powerplant (although not so much on the armor). These two ships also can find huge battles without any real difficulty- the BHG and Order war is pretty serious, and there's enough going on that you probably won't get targeted too early. Not to mention that having a fleet behind you is good for morale, and the "can-do" attitude will do as much for you as actually knowing how to aim and dodge.
