Small update: the Corsair Sabre Mouse is lighting up again when plugged in (and the computer registers something has been plugged in). No functionality though whatsoever.
You have probably two USB hubs like anyone else does. It could be that your driver just freezed and probably died. A way to fix this is to uninstall the mouse driver again and then plug it back in.
Ps. Yes it's possible to do that only with a Keyboard, otherwise install and download teamviewer and let someone else do it who has a working mouse.

That's what I suspect happened when the problem occurred. However, since restarting the mice don't work at all now.

Not sure I have a restore at a point where it was working.

Yep, reinstalled CUE multiple times at this point.
So I used Driver Booster to delete the driver data for all devices that weren't currently in use or plugged in. This resulted in the Sabre working again, so I assume there could have been a duplicate or corrupt driver that was preventing it from working.
Unfortunately, though, the Pro still doesn't seem to work even after doing the above. I'm assuming it must be fried or something. It's still within it's return time, so I'm guessing I'll have to send it to Amazon.
