The Annapurna is a wonderful mining ship. All 6 of its turrets fire forwards and backwards, giving it great firepower, even with one mining turret. It's tiny, so anybody equipped to kill transports won't have a chance against you, while you'll still be able to kill them pretty easily. It's a tiny, fast little mining ship with enough cargo to be able to do a little hauling of its own.
